MLflow tracking integration for evaluation flows.

The mlflow package itself is the required extra ([tracking]). Submodules are loaded lazily via latent._lazy — touching latent.mlflow only imports the wrapper module on first attribute access, not every helper.

latent.mlflow.evaluate is double-gated: it needs the [eval] extra on top of [tracking]. We resolve it lazily and rebind to a _missing_eval stub if the import fails, preserving the legacy "call it to find out" UX.
